Compiled by Ahmed Şevket at the end of the Empire and just at the beginning of the Republic, Aşçı Mektebi stands out for its rich content. Containing hundreds of recipes across a wide range, from soups to kebabs, and from desserts to pickles, this work also sheds light on the food and drink culture of the people in Pera and its surroundings, an elite circle that embraced Westernization as a way of life during the final century of the Ottoman Empire. In this regard, the book includes numerous recipes from European cuisine as well as Turkish cuisine. Meticulously compiled in two volumes by Dr. Göker İnan, Aşçı Mektebi is also noteworthy for being the most comprehensive cookbook ever written in the history of Turkish gastronomy.
